I love whipping up something easy using ingredients we already have in our pantry. Though I originally had something else in mind, I decided to go for a simple baked eggs recipe. It’s so simple, flavorful, and a perfect brunch idea for a cold (and snowy) day. The original recipe didn’t call for pancetta or proscutto, but I added it and they were a big hit. I’d definitely recommend if you eat meat (if not, spinach may be a good option).
